Breakfast Peanut Butter Smoothie Parfait

What a better way to start your day than with a nutritious and delicious smoothie? For a long time I would have told you with a good porridge and fruits, pastries, or granola and yogurt. Because I have to admit that I was not a big fan of smoothies for breakfast. Except during the weekend, I was looking for something nourishing for my breakfast to keep me full all the morning to the lunch and beyond, and I though that a smoothie would not do the job. I did love smoothies, but for me it was more a snack or a post-workout drink than a complete meal. Also, I was a bit reluctant to drink smoothie for meal because I know that, even if told healthy, it was also a significant amont of sugar from the fruits. Indeed, I do not want to demonize fruits and sugar and to be that negative person who tells you that everything is bad for you, I am definitely not like that (at least, no more), but one has to be conscious  that the food industry has really noticed this “Healthy trend” which is gaining consumer interest, and they are playing with it labelling […]

Indeed, I do not want to demonize fruits and sugar and to be that negative person who tells you that everything is bad for you, I am definitely not like that (at least, no more), but one has to be conscious  that the food industry has really noticed this “Healthy trend” which is gaining consumer interest, and they are playing with it labelling all their products as “healthy” just because they have reduced the amont of salt or added in a superfood.

You have to remind that the term healthy is totally subjective and healthy does not mean that you can eat tons of without any consequence. I mean, avocado is healthy in that it is a natural unprocessed product packed with good fatty acids you body needs. But it is still fat, so eating 5 avocados a day will not keep the doctor away 🙂 Okay, I stop it, what I want to say is not always listen what is written on packaging or said on the magazines, healthy is not a universal truth and is different for everyone. What is good for someone is not necessarily for somebody else. Also, healthy is not only about your weight and waist size, it is about your wellness and mind. The more important is that what you eat and how you feel make you happy. An ice-cream can be healthy if it makes you feel happy.

Find YOUR healthy.

It is not an easy journey and for me, I am still working on finding my healthy, but I am on the right way! At least, I have recently found my healthy breakfast to finally be a large green smoothie! I have made a trial, having smoothie for breakfast for 2 weeks, and I have never felt as good as today! Not only it is delicious, but very nutritious and really keep me full for hours! The key is to pack your smoothie with lot of high nutritional value ingredients, try to cut part of fruits and replace by lot of greens. My current favorite one is almond milk, spinach, cucumber, frozen cauliflower, spirulina, maca and hemp protein, with a quarter of banana. So good and I promise you even cannot feel the greens! Anyway, I will prepare a post about this kind of nutritious breakfast smoothies later, but for today, lets enjoy a basic peanut butter and banana breakfast smoothie, layered with homemade granola. Because sometimes, simple things are the best, and when your brain is asking you for peanut butter, then you cannot resist.

PEANUT BUTTER BREAKFAST SMOOTHIE

Prep time: 15 minutes
Serves: 2

INGREDIENTS:

For the Smoothie:

– 3 frozen bananas
– 1/4 cup almond milk
– 1/4 tsp vanilla extract
– 3 tbsp peanut butter (I used Go Nuts organic peanut butter)
– 1 Medjool date, soaked if too dry
– 1/4 tsp cinnamon
– a pinch of salt

To serve:

– your favorite granola. I used my best traditional granola recipe you can find here.

INSTRUCTIONS:

1. In a high speed blender, mix the frozen bananas with the almond milk and vanilla extract, until perfectly smooth. This can take more or less time depending on the power of your blender.

2. Divide the preparation in two equal parts, and set one half aside. Return the other half in the blender with the peanut butter, medjool date, cinnamon and salt and blend again to combine.

3. Assemble your smoothie: take two large glasses and pour in the peanut butter preparation. Make a layer of granola and complete with the basic vanilla preparation. Sprinkle some more granola on top.

SMOOTHIE PETIT DEJEUNER AU BEURRE DE CACAHUETE

Temps de préparation: 15 minutes
Quantités: 2

INGREDIENTS:
