What is Bircher Muesli?

A good alternative to regular muesli

First thing first, what is Bircher Muesli? You probably all know what is a regular muesli. It’s basically a dry mix of oats, nuts, seeds and dry fruits. Muesli is widely consumed for a long time in many countries, as a healthy, easy and nutritious breakfast option. It is great sprinkled on top of yogurt, smoothies or with plant milk.

Despite there is “muesli” in the name, Bircher Muesli is more similar to porridge or overnight oats. It’s a wet and creamy preparation made of oats soaked in a liquid. Traditionally, Bircher Muesli includes a creamy element like yogurt. Fruits like apples are often added to bring sweetness, texture and flavor.

The perfect healthy breakfast for busy days

Contrary to a regular muesli which is more used as a topping, Bircher Muesli is a whole breakfast on its own. It contains oats that are rich in fiber to keep you full for hours, fruits that provides vitamins and carbs, milk or yogurt, and you can even add seeds and whole nuts for the healthy fats and crunchy texture. Garnish with fresh fruits, nut butter or any topping of your choice and you have a delicious full breakfast!

Bircher Muesli is the perfect breakfast for a busy and active day. It only takes 5 minutes to prepare with a few simple ingredients, and can be prepared the night before, so it’s ready to go first thing in the morning! You can even prepare it directly into a glass jar to take everywhere with you, and avoid doing the dishes!

How to make Coconut Bircher Muesli

This Coconut Bircher Muesli is ridiculously quick and easy to make. All you need is 8 simple ingredients.

  • Finely grate the apple. You can either keep or remove the skin.
  • Mix the oats, coconut, chia seeds, lime zest, grated apple and maple syrup in a bowl and stir to combine.
  • Infuse a bag of herbal tea for 5 minutes in warm coconut and water. This step is optional. You can skip it and directly add coconut milk and water to the dry ingredients, OR replace the herbal tea with spices.
  • Pour the milk into the bowl and stir until everything is well incorporated.
  • Cover and place in the fridge for at least 2 hours or overnight.
  • Before to eat it, add a little more milk or a spoon of yogurt and stir for a very creamy texture. Garnish with fresh seasonal fruits, shredded coconut, and any toppings of your choice.

A few tips for making the perfect Bircher Muesli

You can’t fo wrong with this coconut bircher muesli! However, here a few secret tips for making this recipe perfectly!

  • You can use any variety of apples. However firm and crisp varieties like Granny Smith works particularly great in bircher muesli because they tend to hold up better during the soaking.
  • Add a spoonful of coconut yogurt or half a mashed banana, and stir before to enjoy, to make it super smooth and creamy!
  • For even more flavor and natural sweetness, you can replace the water with freshly squeezed juice like orange juice.
  • Prepare this Bircher Muesli the night before and store in a glass jar in the fridge for a healthy breakfast ready to go in the morning!

Description

This Lime and Coconut Bircher Muesli is a healthy and nourishing breakfast loaded with nutrients and flavors. It can be prepared the night ahead for a delicious breakfast on the go!


Ingredients

Scale
  • 1/2 cup coconut milk (100 ml)
  • 1/2 cup water (100 ml)
  • 1 bag of Mango Lime Herbal Tea or any other flavor of your choice (optional)
  • 1/3 cup oats (50 g)
  • 1/4 cup shredded coconut (20 g)
  • 1 tsp chia seeds
  • 1/2 tsp lime zest
  • 1 Granny Smith apple
  • 1 tbsp maple syrup

Instructions

  1. Place the coconut milk and water in a small sauce pan and bring to a gentle boil. When the liquid starts to bubble, reduce to a low simmer, add the bag of herbal tea and allow to infuse during 5 minutes. This step is optional, see the notes below for more options. 
  2. In the meantime, mix the oats, shredded coconut, chia seeds and lime zest in a bowl. Peel and finely grate the apple and add to the bowl with the maple syrup. Stir all the ingredients to combine.
  3. Pour the warm infused milk into the bowl and stir until everything is well incorporated.
  4. Cover the bowl and place in the fridge for 2 hours or overnight. The oats will absorb the liquid and become soft and fluffy. Garnish with fresh fruits, shredded coconut or any of your favorite toppings before to enjoy.

Notes

  1. I used this Twinings Mango Lime Herbal tea to infuse the milk. However, feel free to use any other flavor or brand. You can also replace the herbal tea bag with spices, like cardamome, cinnamon, vanilla or ginger powder.
  2. Granny Smith apples work best in this recipe since they are firm and crisp, but you can use any other variety of apples. 
  3. This Bircher Muesli is best enjoyed within 1-2 days.

Description

Ce Bircher Muesli coco et citron vert est parfait pour un petit-déjeuner sain, nourrissant et gourmand. Il peut être préparé la veille et s’emporte partout, dans toutes vos activités!


Ingredients

Scale
  • 100 ml de lait de coco
  • 100 ml d’eau
  • 1 sachet d’infusion Mangue Citron Vert ou de la saveur de votre choix (optionnel)
  • 50 g de flocons d’avoine
  • 20 g de noix de coco râpée
  • 1 càs de graines de chia
  • 1 càc de zest de citron vert
  • 1 pomme Granny Smith 
  • 1 càs de sirop d’érable

Instructions

  1. Verser le lait de coco et l’eau dans une petite casserole et chauffer doucement. Quand le mélange commence à frémir, réduire à feu doux, ajouter le sachet d’infusion et laisser infuser 5 minutes. 
  2. Pendant ce temps, mélanger les flocons d’avoine, la noix de coco, les graines de chia et le zest de citron vert dans un bol. Eplucher et râper finement la pomme et l’ajouter dans le bol, avec le sirop d’érable. Mélanger tous les ingrédients.
  3. Verser le lait chaud infusé dans le bol et remuer pour bien incorporer tous les ingrédients.
  4. Couvrir et placer au réfrigérateur pendant 2 heures ou toute une nuit. Les flocons d’avoine vont absorber le liquide et devenir tendres et moelleux.
  5. Avant de déguster, ajouter un petit peu de lait végétal et remuer pour redonner de l’onctuosité. Garnir de  fruits frais, de noix de coco râpée et de vos toppings préférés.

Notes

  1.  Pour cette recette j’ai utilisé l’infusion Ayurveda Mangue Citron vert Twinings. Cependant, vous pouvez utiliser n’importe quel parfum ou marque de votre choix. Vous pouvez également remplacer le sachet d’infusion par des épices, comme la cardamome, la cannelle, la vanille ou le gingembre et les faire infuser dans le lait.
  2. Préférez une pomme de la variété Granny Smith, croquante et ferme, qui se prête particulièrement bien à cette recette.
  3. Ce bircher muesli peut être préparé la veille au soir et être consommé dans les 2 jours qui suivent.
