The delicious taste of cinnamon roll in a single serving mug cake

Yes, I know this is my third mug cake recipe in only a few weeks and you’re probably rolling your eyes at me right now thinking “not AGAIN a mug cake Alice, that’s overdone”. But really guys, this one isn’t like any other mug cake you’ve tried before! It is soft, moist, rich and packed with delicious cinnamon flavors. It’s literally cinnamon roll in a mug, but without any kneading, rising, rolling, or oven preheating! YES, you’ve heard me! Cinnamon rolls ready under a few minutes to satisfy your sweet tooth! Perfect for when you’re craving cinnamon rolls but don’t have the time or the motivation to make traditional ones.

As you start to know me, just like my Peanut Butter Brownie Mug Cake and my Lemon Blueberry Mug Cake recipes, I tried to make this one as simple and healthy as possible. Forget the egg, dairy and white flour. They are replaced by gluten-free oat flour, almond milk and plant based yogurt for a totally vegan and oil-free batter. What about the cinnamon swirls? The traditional butter + sugar mixture has been replaced by a coconut oil and coconut sugar preparation, much lighter.

And if you don’t have oat flour at home? You probably have rolled oats for your breakfast porridges! Simply blend some of them until you get a fine flour, and that’s it! Super easy!

How to make the cinnamon swirls

The main difference between this recipe and many other mug cake recipes I’ve tried before is that it perfectly replicates the delicious layers you can find in traditional cinnamon rolls. One of my favorite things about cinnamon rolls is to pull apart the layers and keep the gooey very center for the last exquisite bite. I really wanted to recreate that feeling into this recipe.

To make it possible, I’ve made this mug cake in two separate parts. One preparation is a simple cinnamon flavored batter, and the other one is a buttery cinnamon swirl. Because of their compositions, the two preparations won’t combine during the baking and create these oh-so satisfying layers.

To make the cinnamon swirls, start by preparing separately the two mixtures, following the recipe. Then, grab a greased microwave safe mug and proceed to the assembly. Start by pouring about one third of the batter preparation in the bottom of the mug. Then, drizzle one spoon of the cinnamon swirl on top and gently swirl using a toothpick to form … a swirl -that’s a lot of swirls there! You’ve just done the first layer of your mug cake! Start again with another third of the batter, cinnamon swirl, batter, and finish with a generous swirl of cinnamon on top. That’s it!

How to bake this mug cake (microwave & oven options)

Now that your Cinnamon Roll mug cake is assembled, it’s time to bake it! And all the magic of mug cakes is that they are baked in less than 2 minutes in microwave. Yes, only 2 minutes and you can be indulging in this scrumptious moist and fluffy treat!

To perfectly bake your Cinnamon Roll mug cake, assemble in a microwave proof mug and simply microwave for 45 seconds to 2 minutes. Because microwaves’ power and mugs’ size are all different, microwave time can also vary. My recommendation is to start with 60 seconds on high power, then check the consistency of the batter. The surface of the mug cake should feel firm by touch but not too dry. If it’s too wet and needs to be cooked a bit longer, proceed with 15-second increments until it’s just baked. Don’t exceed 2 minutes or your mug cake will be very dry and crumbly!

This recipe has been specifically designed for the microwave. I personally haven’t try to bake this particular mug cake recipe in traditional oven. However, based on my experience with other similar mug cake recipes, it should be suitable too! I would bake at 350F for 10-12 minutes, or until a toothpick comes out clean.

This easy single serving microwave Cinnamon Roll Mug Cake is the perfect treat when you’re craving cinnamon roll, but don’t have the time for it! It has delicious layers of cinnamon swirls mixed throughout a fluffy and gluten-free cake batter. 


Ingredients

Batter

  • 1/4 cup + 1 tbsp oat flour
  • 1/2 tsp baking powder
  • 1 tsp ground cinnamon
  • 1 pinch of salt
  • 2 tbsp almond milk
  • 1 tbsp plant based yogurt
  • 1 tsp maple syrup
  • 1 tsp vanilla extract

Cinnamon swirl

  • 1 tsp melted coconut oil
  • 1 tsp coconut sugar
  • 1/2 tsp ground cinnamon

Instructions

  1. Mix the oat flour, baking powder, ground cinnamon and salt into a bowl.
  2. Add the almond milk, plant based yogurt, maple syrup and vanilla and stir with a spoon until combined. The batter should be smooth, similar to a cake batter.
  3. Prepare the cinnamon swirl mixture by adding all the ingredients into a small bowl.
  4. Pour one third of the cake batter into a large microwave-safe mug. Then drizzle a spoon of the cinnamon mixture on top and gently stir to create a swirl. Cover with another third of the cake batter, and repeat: cinnamon swirl, batter, and finish with a generous swirl of cinnamon mixture on top.
  5. Microwave on high for 60 seconds. Then open the door and check the batter by gently pushing with your finger: the surface should be dry and the cake pretty spongy. If the batter is still too wet, microwave another 15 seconds and check again. Cook in 15-second intervals until it’s just baked.
  6. Remove from microwave and let cool down a few minutes before eating.

Notes

  1. This recipe leads to a medium-large mug serving. For a smaller mug cake, feel free to divide the quantities and so to reduce the baking time.
  2. Make sure to use a microwave-proof mug. The mug should be big enough to be three-quarters full with the raw dough as it will rise during the baking.
  3. You can also bake your mug cake in a traditional oven, for 10-12 minutes at 350F, or until a toothpick comes out just clean.

Appareil à mug cake

  • 35 g de farine de flocons d’avoine (voir notes)
  • 3 g de levure chimique
  • 1 c. à c. de cannelle en poudre
  • 1 pincée de sel
  • 30 ml de lait d’amande
  • 25 g de yaourt végétal
  • 1 c. à s. de sirop d’érable
  • 1 c. à c. d’extrait de vanille

Nappage cannelle 

  • 1 c. à s. d’huile de coco fondue
  • 1 c. à s. de sucre de coco
  • 1/2 c. à c. de cannelle en poudre

Instructions

  1. Mélanger la farine de flocons d’avoine, la levure chimique, la cannelle et le sel dans un bol.
  2. Ajouter le lait, le yaourt végétal, le sirop d’érable et l’extrait de vanille et remuer jusqu’à obtenir une pâte, semblable à celle d’un gateau classique.
  3. Préparer la nappage à la cannelle en mélangeant tous les ingrédients dans un petit bol. 
  4. Assemblage: verser un tiers de la pâte dans un mug allant au micro-onde, puis ajouter un filet du nappage à la cannelle, et remuer délicatement pour former un tourbillon. Recouvrir avec un autre tiers de pâte, de nappage cannelle, et recommencer jusqu’à épuisement de la pâte. 
  5. Cuire au micro-ondes à pleine puissance pendant 60 secondes. Retirer le mug du micro-ondes et vérifier la cuisson en tapotant avec le doigt: le mug cake doit être moelleux mais assez sec en surface. Si la pâte est encore trop humide, cuire pour 15 secondes supplémentaires et vérifier de nouveau la texture. Continuer ainsi la cuisson, par intervals de 15 secondes, jusqu’à ce que la surface soit sèche. Attention à ne pas pousser la cuisson au-delà de 2 minutes pour ne pas qu’il soit trop sec.
  6. Retirer du micro-ondes et laisser refroidir quelques minutes avant de déguster.

Notes

  1. Pour réaliser votre farine de flocons d’avoine maison, mixer simplement des flocons d’avoine jusqu’à obtenir une poudre fine.
  2. Cette recette est pour un mug de plutôt grande taille. Pour un plus petit mug cake, diviser les quantités par deux et réduire d’autant le temps de cuisson.
  3. Assurez-vous d’utiliser un mug qui convient à la cuisson au micro-ondes. Le mug doit être suffisamment grand pour être rempli au 3/4 du mélange cru car la pâte va gonfler à la cuisson.
  4. Vous pouvez également cuire le mug cake au four traditionnel, pendant 10 à 12 minutes à 180°C.
